是不是非常驚人？稱呼Antonio Lai是造時勢的英雄並不為過，因稅法的緣故，啤酒與紅酒一直是港人日常生活的主角，但近年來香港也掀起一股調酒風潮，推動者正是有分子調酒大師稱號的Antonio Lai，他本人不但多次在各個國際級的調酒大賽名列前茅，他所創設的連鎖酒吧體系也成為不管是當地酒友或是國外旅人想喝精緻調酒必去朝聖之處，Room 309 & VEA就是其中最具代表性的兩間。
Antonio Lai雖然被稱為分子調酒大師，但那只是他擅長技法的其中之一，特別受人矚目而被媒體大肆報導得來的稱號。他本人是一位非常注重基本功與經典調酒的Bartender，所有的創意都是站在這個基礎上延伸發揮，在他的店裡所強調的是全方位的享受，嗅覺、味覺、視覺、觸覺以及聽覺的MM哲學〈Multisensory Mixology〉。而他非常喜愛琴酒的獨特魅力，香港第一間琴酒吧也是他所創設，過去他也多次受邀來台參與活動，而這次為了Gin Tonic Pa，Antonio Lai特別選用了正統London Dry Gin的代表– No.3 Gin設計多款特調，要讓你了解金牌特務在最後決戰前選擇這款琴酒調製馬丁尼的理由！
